Mindy’s Beet Soup with Roasted Garlic
Cooking: 60 min
- 4 medium beets
- 2 cloves roasted garlic, peeled
- ½ tsp. salt
- ½ tsp. sugar
- 1 ½ cups buttermilk
1) Cut off beet greens and scrub beets well.
2) Place beets and garlic in a saucepan and cover with water. Simmer 45 to 55 minutes or until tender.
3) Remove beets and reserve ½ cup of cooking liquid. Peel beets and chop.
4) Place chopped beets, roasted garlic, salt, sugar and buttermilk in a blender. Blend until smooth. Heat through.
